How to Impress Boyfriend's Mom oops Mother? It can be especially hard for the girlfriend and the mom to get along sometimes. Especially when those women are similar in nature.

How To Impress Boyfriend's Mom

In order to avoid a full-fledged debate, keep your opinions to yourself, especially on topics like politics, religion and money. You may not agree with her view points but you don't have to mention it. Just ask someone to pass the stuffing and change the subject to avoid a possible dispute that can only lead to one other thing: a dispute with your man.

2. Butt-Out

If your man and his mom aren't seeing eye-to-eye on something, don't attempt to save the day. You should never pick sides between them and it's important to remember this is his mom, not yours. If they argue, it will eventually pass. If you get into an argument with his mother, it won't pass quite so easily.

3. Be Yourself

In other words, don't kiss up. Just be yourself and don't try so hard to get his mother to like you. You may not be BFFs right off the bat but you can't force it either. Just remember, he loves you for who you are so his family will, too. Including his mom.

4. Use Your Man as a Mediator

This is not to say you should put him in the middle, but if his mom says something hurtful to you, let him know how you feel so he can gently discuss it with his mother the next day. If you bring it up, it may come out all wrong. She's not your mom and you may not see things the same way. But he will know best how to speak to her without hurting her feelings. And make sure to hold off on this discussion until the day after Thanksgiving so no one else at the table has to feel awkward listening to the issue between you and his mom.

5. Don't Sweat the Small Stuff

You might not like the way she offers you cranberry sauce but is it really that important? Try to be the bigger person and enjoy the day for your sake and your man's. Don't let those little things get under your skin. At least not today.

Happy St. Patrick's Day....of course!

As usual, I'm a little late....of course! I hope everyone had a wonderful, safe St. Patrick's Day.

Being that the holiday was on a Thursday, Matt and I did the responsible thing. We stayed in instead of fighting the drunken crowds at every drinking establishment around town.

However, I am not one to pass up any reason to celebrate! Thursday night for dinner Matt and I followed tradition....of course!

We dined on corned beef, cabbage, and potatoes.

Whose tradition? Not mine, I'm not Irish, but Matt is! Whether or not this was his tradition before is highly debatable, however it will now become just that.
As would only seem correct with most of our celebrations, this dinner is not exactly authentic IrishIt is very much an Irish American tradition. The celebration of St. Patrick was first noted as an official holiday in the 17th century. At that time in Ireland beef was considered a delicacy. Pork and bacon were much more commonly seen around the dinner table. A broiled piece of bacon was traditionally used in Irish meals. During the Great Famine of the 18th century many Irish immigrated to America. It was here in the states, where it was more affordable and accessible, that beef was substituted during dinner.

So, Cheers! To the Irish, St. Patrick, Irish Americans, and well drinkers around the world....of course!

Fun Fact: President Abraham Lincoln's Inaugural Dinner Menu consisted of Corned Beef and Cabbage with Parsley Potatoes!

UPDATE!!
Corned Beef Hash
With this quick breakfast idea in mind, I saved a small portion of the corned beef and potatoes from Thursday's dinner for Sunday's breakfast. I've never been a fan of corned beef hash. I personally can't stand the taste or texture. Everything about it says NO! to me. However, with my leftovers and "I can make anything taste good" attitude I decided to try my hand at this classic breakfast dish.

Of course....it was delcious!

The corned beef and potatoes were so crispy, the egg just perfectly cooked. When you cut into the egg the yolk oozed into the hash!

Matty and I both were very pleased with the outcome!

I'm baaack..Asparagus Fritters

To contact us Click HERE
After a super long hiatus I’m back. Caught up in the whirlwind of life I somehow allowed blogging to fall off the To Do List. What thisnow means is that I have a surplus of recipes, pictures and even a foodfestival to throw in. So enjoy!I found this recipe while browsing through another blog,Closet Cooking. I always enjoy trying new things, new concepts, even putting anew twist on an old favorite. I thought this was a great recipe to try becauseI love asparagus and who doesn’t care for a little bit of fried goodness? Here is Kevin from Closet Cooking's Recipe……..Asparagus and Feta FrittersIngredients
  • 1 pound asparagus, trimmed
  • 1 handful dill, chopped
  • 1 handful parsley, chopped
  • 2 green onions, chopped
  • 1/2 cup feta, crumbled
  • 1 egg
  • salt and pepper to taste
  • 1/2 cup flour (I like to use whole wheat)
  • 2 tablespoons oil
Directions1. Grate or process the asparagus in a food processor. (I actually just chopped-Ruby)2. Mix the asparagus, herbs, green onions, feta, flour, egg, salt and pepper and enough flour that the mixture will hold together.

3. Heat the oil in a pan.

4. Spoon the asparagus mixture into the pan and cook until golden brown on both sides, about 4 minutes per side.

Avgolemono SauceIngredients·        1 egg (lightly beaten)·        1/2 lemon (juice)·        1 tablespoon dill chopped·        1 tablespoon capersDirections1. Whisk the egg in bowl until frothy.
2. Slowly whisk in the lemon juice followed by the water.
3. Heat in a small sauce pan while whisking until the sauce thickens, mix in thedill and capers and remove from heat. (Do not bring it to a boil.)
I tried the fritters two different ways. Of course as I wasmaking the first batch I tried a few as a snack. They are delicious on theirown. I imagine they would make a great accompaniment to a salad or also servedas an edible garnish aside a meat dish. For dinner I served the fritters toppedwith a poached egg and avgolemono sauce just as Closet Cooking suggests. The egg and light zestiness of the sauce definitely complimented the frittersin their search to become a full meal. I served them alongside roasted potatoes and green beans with parmesan olive oil sauce from SteamFresh. Overall, a very delicious meatless dish.

{Super Bowl Recipes} Spinach Artichoke Focaccia with Fleischmann's yeast

Here is another easy Spinach Artichoke Super Bowl Recipes. It uses Fleischmann's Yeast for the Focaccia which turns a dip into  portable bread bites.
Focaccia

Before I give you the recipe I want to share with you a Super Bowl Special Big Game promotion for Fleischmann’s Pizza Crust yeast on their Facebook page. All you need to do is submit your favorite "Big Game" pizza recipe to be entered to win a pizza stone, pizza cutter and other great prizes.

I am working on my Big Game Day recipes to share with family and friends. For the day, our group loves to prepare simple, tasty and savory recipes. I tried out this Fleischmann's Yeast recipe to see if it was worth taking on Sunday. It was a hit with my family so I will be making it for game day. They love spinach artichoke dip and this recipe make for a portable snack because it is layered and baked on top of a home made focaccia.

Do you cook or bake from scratch these days? I'm finding more and more that I am going back to the basics and baking from scratch. This focaccia recipe didn't take too long to make and the taste was so much better than a frozen one from the store. It was fresh and didn't have any added preservatives!

I was telling my teen, who helped me with this recipe, that 15 years ago I alway made my own bread, hamburger buns, etc. Over time I did stop baking bread from scratch because of all the easy to buy baked goods at the local store. Guess what? My pantry is stocked with Fleischmann's yeast so get ready for more made from scratch recipes here on my blog. I've already found a few more ideas from the Fleischmann's yeast baking website and plan to try out their Fleischmann’s Pizza Crust yeast.

Spinach Artichoke Focaccia

Spinach Artichoke Focaccia

Makes: 18 servings
Prep Time: 25 minutes
Proof Time: 30 to 40 minutes
Bake Time: 30 to 35 minutes

Ingredients

Bread:2-1/2 to 3 cups all-purpose flour1 envelope Fleischmann's® RapidRise Yeast1 tablespoon sugar1 teaspoon salt1 cup very warm water (120° to 130°F)2 tablespoons olive oil2 tablespoons butter OR margarine, melted1 tablespoon Spice Islands® Minced Garlic
Topping:1 tablespoon butter OR margarine1/4 cup minced onion1 package (8 ounces) cream cheese, softened1/4 cup grated Parmesan cheese 1/4 cup mayonnaise1/2 teaspoon Spice Islands® Garlic Powder1 package (10 ounces) frozen spinach, thawed and drained 1 can (14 ounces) artichoke hearts, drained and chopped1/2 cup shredded Monterey Jack cheese
Directions

Combine 1-1/2 cups flour, undissolved yeast, sugar and salt in a large mixer bowl.  Add water and oil and beat for 2 minutes.  Add enough remaining flour to make a soft dough.  Turn out onto floured counter and knead 5 to 6 minutes, until smooth.  Cover dough and let rest 10 minutes.  Combine butter and minced garlic; set aside.

Roll or press dough to fit into a greased 13 x 9-inch pan.  Using wooden spoon handle or a finger, poke holes in dough every 1 to 2 inches.  Drizzle with garlic butter mixture.  Cover and let rise 30 to 40 minutes, until doubled.  Bake in a preheated 375°F oven for 20 to 25 minutes; remove from oven.
While focaccia is baking, make the topping.  Melt butter in a large skillet over medium heat; add onion and cook 2 to 3 minutes or until onion is soft.  Reduce heat to low and add cream cheese, Parmesan cheese, mayonnaise and garlic powder.  Stir until blended and softened.  Squeeze any remaining liquid out of spinach.  Add spinach and artichokes to skillet, stirring to blend.  Spread over partially baked focaccia.  Sprinkle with Monterey Jack cheese.
Return to oven and bake an additional 10 minutes or until cheese is melted.  Best served warm.

Kitchen Notes: We loved this and it tasted just as good warm as it did cold. One of the teens suggested to use less topping and add chicken next time to make it a meal. I thought that was a great idea and will add it next time. Check out my first Focaccia recipe from a few years back.

So what do you think? Will you try this easy to make Super Bowl recipe? What snacks will you make or expect to eat? Which team are you cheering for? Don't forget to enter the Big Game Promotion which will end 2/3/13.
