Holiday Recipe-Peppermint Chocolate Patty Bark and Holiday Hop

Easy Holiday Recipe to make for family and friends. This peppermint chocolate patty bark is quick and great for gifts.


Peppermint Chocolate Patty Bark

 Ingredients
 1 pkg chocolate almond bark
 1/4 cup crushed up candy canes
 1/2 cup white chocolate chips
 2 Tbsp crushed up candy canes for the topping
 Sprinkles, optional

Directions

 Melt bark in microwave according to package instructions.
 Add in candy canes and stir until all covered in chocolate.
 Quickly stir in white chocolate and pour out onto a 11 x 17 baking sheet.
 Top with crushed candy canes any if wanted, sprinkles of your choice.
 Once hard, break and eat!

Directions

1 cup hot chocolate powder8 broken up graham crackers1 cup of white chocolate pieces or chips (or whatever you have on hand)sprinkles, optional
Ingredients
Melt bark in microwave according to package instructions.  Then add in chocolate mix, & graham crackers. Stir.  Then quickly stir in white chocolate and pour out onto a 11 X 17 baking sheet.  Top with sprinkles of your choice. Once hard, break and eat! Use different flavors of hot cocoa mix to get different variations on this recipe!

As usual, I'm a little late....of course! I hope everyone had a wonderful, safe St. Patrick's Day.

Being that the holiday was on a Thursday, Matt and I did the responsible thing. We stayed in instead of fighting the drunken crowds at every drinking establishment around town.

However, I am not one to pass up any reason to celebrate! Thursday night for dinner Matt and I followed tradition....of course!

We dined on corned beef, cabbage, and potatoes.


Whose tradition? Not mine, I'm not Irish, but Matt is! Whether or not this was his tradition before is highly debatable, however it will now become just that.  
As would only seem correct with most of our celebrations, this dinner is not exactly authentic IrishIt is very much an Irish American tradition. The celebration of St. Patrick was first noted as an official holiday in the 17th century. At that time in Ireland beef was considered a delicacy. Pork and bacon were much more commonly seen around the dinner table. A broiled piece of bacon was traditionally used in Irish meals. During the Great Famine of the 18th century many Irish immigrated to America. It was here in the states, where it was more affordable and accessible, that beef was substituted during dinner.

So, Cheers! To the Irish, St. Patrick, Irish Americans, and well drinkers around the world....of course!

Fun Fact: President Abraham Lincoln's Inaugural Dinner Menu consisted of Corned Beef and Cabbage with Parsley Potatoes!

Corned Beef Hash
With this quick breakfast idea in mind, I saved a small portion of the corned beef and potatoes from Thursday's dinner for Sunday's breakfast. I've never been a fan of corned beef hash. I personally can't stand the taste or texture. Everything about it says NO! to me. However, with my leftovers and "I can make anything taste good" attitude I decided to try my hand at this classic breakfast dish.


Of course....it was delcious!

The corned beef and potatoes were so crispy, the egg just perfectly cooked. When you cut into the egg the yolk oozed into the hash!

Matty and I both were very pleased with the outcome!

After a super long hiatus I’m back. Caught up in the whirlwind of life I somehow allowed blogging to fall off the To Do List. What thisnow means is that I have a surplus of recipes, pictures and even a foodfestival to throw in. So enjoy!I found this recipe while browsing through another blog,Closet Cooking. I always enjoy trying new things, new concepts, even putting anew twist on an old favorite. I thought this was a great recipe to try becauseI love asparagus and who doesn’t care for a little bit of fried goodness?Here is Kevin from Closet Cooking's Recipe……..Asparagus and Feta FrittersIngredients
  • 1 pound asparagus, trimmed
  • 1 handful dill, chopped
  • 1 handful parsley, chopped
  • 2 green onions, chopped
  • 1/2 cup feta, crumbled
  • 1 egg
  • salt and pepper to taste
  • 1/2 cup flour (I like to use whole wheat)
  • 2 tablespoons oil
Directions1. Grate or process the asparagus in a food processor. (I actually just chopped-Ruby)2. Mix the asparagus, herbs, green onions, feta, flour, egg, salt and pepper and enough flour that the mixture will hold together.
 

3. Heat the oil in a pan.
 
4. Spoon the asparagus mixture into the pan and cook until golden brown on both sides, about 4 minutes per side. 


Avgolemono SauceIngredients·        1 egg (lightly beaten)·        1/2 lemon (juice)·        1 tablespoon dill chopped·        1 tablespoon capersDirections1. Whisk the egg in bowl until frothy.
2. Slowly whisk in the lemon juice followed by the water.
3. Heat in a small sauce pan while whisking until the sauce thickens, mix in thedill and capers and remove from heat. (Do not bring it to a boil.)
I tried the fritters two different ways. Of course as I wasmaking the first batch I tried a few as a snack. They are delicious on theirown. I imagine they would make a great accompaniment to a salad or also servedas an edible garnish aside a meat dish. For dinner I served the fritters toppedwith a poached egg and avgolemono sauce just as Closet Cooking suggests. The egg and light zestiness of the sauce definitely complimented the frittersin their search to become a full meal. I served them alongside roasted potatoes and green beans with parmesan olive oil sauce from SteamFresh. Overall, a very delicious meatless dish.

Have you ever served shelf save milk to your family? Why or why not? If you aren't sure of what this is, here are the benefits for your family.
Have you ever heard of shelf safe milk? If not, what is the first thing you think of when you hear shelf safe milk? I just recently learned about Shelf Safe Milk. Up to this point I had never heard anything good or bad about the product. When I first heard about it, I though this must be something that is used in countries where they do not have refrigeration. After reading more, I found out it is not just for countries like that but something that is used anywhere and anytime!

After reading more about this product, I learned that shelf safe milk is real milk with no additives or preservatives and doesn't require any refrigeration until it is opened. This product has been around since the 1960s. Really? I can't believe that I am just learning about this. I'm a 40 something mom with 3 teen daughters and I'm just now learning about a milk that can be served anywhere, anytime without the worry of keeping it cold until ready to drink.

We are a busy family and I can recall many times when I wished we had milk to give the kids during sporting events, traveling for many hours to visit family or even a container of milk to drink while having a picnic at the park. How about you?

Shelf safe milk makes getting nutrients easy, which is especially needed for my 3 teen girls. I am always concerned if they are getting enough calcium to keep their bones strong. I read that one carton of shelf safe milk has 8 grams of protein and 9 essential nutrients which includes calcium, A, D, B12, potassium, phosphorus, magnesium, riboflavin, niacin and zinc. All of which requires no refrigeration until opened!

This ultra pasteurized and special Tetra Pack eco-friendly cartoned milk is perfect for our busy life. I love that single serving packs can be tossed into lunch boxes, diaper bags, backpacks and picnic baskets until it is ready to be enjoyed! My girls want to try the flavored milk, too. Do you buy products in bulk? Which are your favorite? I know that a lot of us purchase toilet paper, paper towels, coffee, meat, etc in bulk. Well now you and I can also buy our milk in bulk. It can be stored on the shelf, in the pantry and even in the garage. As with all bulk buying, it saves time and money. This milk will definitely come in handy in my kitchen. I can recall many times when I needed milk for a recipe to find out that someone finished the milk without tell me. This will be great to have on the shelf until I am ready to use it.

When you think holiday shopping do you think eBay? I have to say that I normally do not think eBay first but this year I am finding that eBay is easy and a convenient way to get shopping done quickly. I LOVE the eBay Holiday Gifts and Gift Ideas guide. Check it out and see how easy it is to do your shopping on eBay, too! 
I'm all about saving money and have found a lot of deals with eBay's new and buy-it-now products. Gone are the days waiting for an auction to end especially with the holiday countdown showing that I have less than 1 month to have everything ready. 
Besides shopping on their website at home, I love the eBay Mobile App which is free to download. The app works with your desk top site and allows you to shop, watch, buy, sell and more! It love it because I can easily search for items while I'm away from home. I was able to search for something while at a store to see if I was getting a good deal on eBay, which I was!

RSV Awareness and World Preemie Day

Almost every baby under the age of two will contract RSV. Here are RSV facts and prevention tips, especially for premature babies. 

Preemie Awareness Day was November 17th. I alway think about this day and give thanks because my twins were born at 32 weeks premature. I was on bedrest for over 2 months before they were born. I was very blessed to have been monitored so closely. It wasn't easy being on almost complete bedrest at home and then at the hospital. The doctors did everything that they could before birth to make sure the twins would be born healthy. My girls were 2#5 oz and 4# 3 oz when born. I was given steroid shots to help their lung development before birth. How about you? Did you have preemies? I'd love to hear your story.

I just read that 13 million babies are born early every year with half a million in the United States. This prematurity is the leading cause of neonatal death. 3 out of 10 moms didn't know the risk that comes with premature birth until they had their first child. I personally knew, before having my twins, that most premature babies have many medical issues that could lead to death. The stats show that 79 percent of preemie moms have a baby who was hospitalized due to severe respiratory infection. 
The particular respiratory infection that causes the most difficulty in preemies is the RSV or respiratory syncytial virus. I learned that nearly ALL children by age of two will get this virus which causes minor symptoms of the common cold. The problem with preemies is that they are at a much higher risk of more serious symptoms because of their underdeveloped lungs and lack of antibodies to fight the infection. This all sounds so scary after the fact for me.Here are some quick RSV facts & Prevention tips from RSVProtection.com:
RSV Facts:*RSV is the leading cause of infant hospitalization*10 times more infant deaths from RSV vs. the flu*RSV is more prevalent in the winter months with November-March being the "RSV season"*Risk factors are premature babies, low birth weight, heart or lung disease and a family history of asthma*Frequent contact with other children*Easily spread from touching, sneezing and coughing and it is very contagious
Prevention Tips:*Wash hands, toys, bedding and play areas frequently*Have visitors or people who will be touching your baby wash hands and/or use hand sanitizer*Avoid large crowds or people you know to have been sick*Don't allow any smoking around your child*If your baby is in the high risk category, talk to your doctor about preventive therapy.*If your baby has severe coughing, wheezing or rapid gasping breaths contact your pediatrician immediately.*If you see blue coloring of the lips, mouth or under the fingernails, contact your pediatrician.*If your baby has a high fever or is extremely fatigued, contact your pediatrician.
My twins did not get RSV which is totally amazing to me. I didn't know much about it at all. So if you are a soon-to-be mom I hope that this information is helpful to you. Holiday Menu Gingerbread Snack Mix & Holiday Hop of Goodies

Easy holiday recipe to add to your Holiday Menu. This gingerbread snack mix is quick & easy to make & give as gifts, too. 

Chocolate Gingerbread Snack Mix

Ingredients

1 pound chocolate almond bark
cups chex mix
3 cups gingerbread marshmallows

Directions

Melt the bark. (Do it on the stove top, microwave or melting pot)
Once melted, add in chex mix. Give it a good stir. The pieces do not need to be totally covered in chocolate.
Add in gingerbread and give it a few stirs.
Pour out onto a parchment lined cookie sheet.
Once cool, break about in chunks.
So yummy.

Kitchen notes: Use any type of snack mix with this recipe. I had a huge bag of snack mix that was leftover and this was what I used. Try using different types of marshmallows and/or white almond bark. Have fun with it.

U by Kotex Tween Mommy Talks #KotexMom

Young girls need the first talk so that they can grow to be mature young ladies who can take care of there body. The first talk becomes many talks as you prepare them for their menstrual cycle period.

Over the past 6 months I have been working as a Brand Ambassador for U by KotexTween. I know that quite a few of you have been following along and I really appreciate all the messages that I have received with your questions about how to have "the talk" with your daughter. I hope that you all learned something and are better prepared or have been made more aware of things to discuss and places to go for that information.

For those of you not aware, I'm a mom of 3 teen daughters. So I have had my share of talks over the past 9 years with each of them. One thing that I have learned over the years is that each talk is different for each young girl. They all have different learning and listening skills so each talk was crafted just for them. One loves details, the other wants just enough to grasp the concept whereas another wants reading materials so that she can read more about it after the talk. No matter what, the girls need to learn about their menstrual cycle and how their body changes from little girl to young woman and then on to being a mother. My girls have all said that they feel like we have a special bond that can't be broken.

Out off all the post that I crafted, I really have to say that the "Tween first talk on breaking the ice" was my favorite post. I say this because personally that was the first time I went into an all out mommy panic mode. I discussed the importance of being educated on what needs to be said and when.

"My point is for you to educate yourself on puberty changes, read everything available to you and don't go in an all out momma panic mode. You only panic when stressed and I was stressed about them leaving. Don't let stress ruin everything that you have been preparing for. My ice breaker was, "ok girls you are going away for a week and I want to tell you about something that might happen while you are gone." glup. Don't do that. Really, I did that!! The twins told me years later that I freaked them out. They didn't even start for another 3 years. Over those next few years, we had many talks to help them be prepared and not scared."
So be prepared, education yourself (Kotex site and U by Kotex site), check out your resources, ask questions from other moms and know that your daughter needs you to share this information with her. Educate her so that she can grow to be a confident young lady. Remember, someday she will need to share this with her daughter and will look back on the time you shared with her as valuable, treasured moments in her life.

Tips to write Love Messages


Since love is a special feeling and since its expression varies between people love notes too vary pretty widely. Writing love messages really isn't that hard to do. If you are not one of the unlucky few who find it hard to express themselves, you will be able to write love notes without difficulties. Even if you face some initial difficulties in writing a message you’ll find the rhythm eventually. Once you find your form you will be amazed to see what power these love messages have. It really doesn’t have to be the one written in books and novels but it can be your very own. Following are few tips which will help you write romantic messages.Be yourself: Since there is no text book rule for writing romantic messages you can actually write whatever you want. The first and the best way to write love messages is to just write what you are thinking. If you are not into writing poems or poetries don’t try to turn your love message into a great piece of literary work. The actual message may get lost in this process. If you are a simple person at heart or think in simple ways your message should sound like that. If you are an intellectual person your love message would be a reflection of that. Short and succinct: Since your love note won’t be adjudged for Nobel Prize in literature you can safely write something short and sweet (you can also afford to be mushy). You also have to consider if the other person has the time to read long notes. Hence, the second thing to remember while writing romantic messages is that they don't have to be long. The purpose of writing love notes is to covey your feelings to your sweetheart and remembering the objective would help you focus on the core message. Keeping the message short is also good for the beginners.
Do it often: How often do you think about your girl? And, how often do you send her notes?
